Easy Spicy Corn Chowder
Rich, creamy, and soul-warming with just the right amount of spice.- ½ onion, chopped
- ½ carrot, diced
- ½ red bell pepper, diced
- 1 celery stalk, diced
- 2 tbsp butter
- 1 sprig fresh thyme
- 1 bay leaf
- 1 tbsp cornstarch
- 1 russet potato, diced
- 2 corn cobs, kernels removed
- 3 cups water
- ½ cup heavy cream
- 1 tbsp Yondu Vegetable Umami
- 1 tbsp Yondu Spicy
- Fresh cilantro for garnish (optional)
Method

1. Heat butter in a large pot over medium heat. Add onion, carrot, bell pepper, celery, thyme, and bay leaf. Cook 5 minutes until softened.
2. Stir in cornstarch, then add corn kernels and diced potato. Mix well.
3. Add water, cream, Yondu Vegetable Umami, and Yondu Spicy. Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are tender.
4. Remove bay leaf and thyme sprig. Serve hot, garnished with fresh cilantro.
Perfect heat control every time - start with 1 tbsp Yondu Spicy and add more at the table for spice lovers. Swap corn for roasted butternut squash or sweet potato for seasonal variety.
