Easy Spicy Corn Chowder

Rich, creamy, and soul-warming with just the right amount of spice.
  • ½ onion, chopped
  • ½ carrot, diced
  • ½ red bell pepper, diced
  • 1 celery stalk, diced
  • 2 tbsp butter
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 1 tbsp cornstarch
  • 1 russet potato, diced
  • 2 corn cobs, kernels removed
  • 3 cups water
  • ½ cup heavy cream
  • 1 tbsp Yondu Vegetable Umami
  • 1 tbsp Yondu Spicy
  • Fresh cilantro for garnish (optional)

Method

    1. Heat butter in a large pot over medium heat. Add onion, carrot, bell pepper, celery, thyme, and bay leaf. Cook 5 minutes until softened.
    2. Stir in cornstarch, then add corn kernels and diced potato. Mix well.
    3. Add water, cream, Yondu Vegetable Umami, and Yondu Spicy. Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are tender.
    4. Remove bay leaf and thyme sprig. Serve hot, garnished with fresh cilantro.
  • Tip
  • Perfect heat control every time - start with 1 tbsp Yondu Spicy and add more at the table for spice lovers. Swap corn for roasted butternut squash or sweet potato for seasonal variety.
