  • 1 head Cauliflower, florets
  • 2 Tbsp Extra Virgin Olive oil
  • 2 Tbsp Yondu
  • 1 each Eggplant, large
  • 2 Tbsp Yondu
  • 1 clove, Garlic
  • 2 Tbsp Extra virgin olive oil
  • Nuts (garnish)

Method

  • Preparation:
  • 1. Preheat oven under broiler. Spread out cauliflower florets on a sheet tray and toss with oil, Yondu and black pepper. Cook until golden brown about 5-10 minutes, toss it around half way through.
    2. Place whole eggplant in a microwavable plate and microwave for 8 minutes.
    3. Peel the eggplant, combine with rest of the ingredients and hand blend until smooth.
    4. Garnish with nuts and extra olive oil, serve with roasted cauliflower.

    Notes/tips:
    Replace cauliflower with other vegetables to your preference.
