Creamy Peanut Noodles

  • 8 oz noodles (fettuccine, ramen, or udon)
  • 3 tbsp peanut butter
  • 1 tbsp Yondu Vegetable Umami
  • 1 tsp Yondu Spicy
  • 1 tbsp rice vinegar
  • 3 tbsp water
  • 1 tbsp sesame oil
  • 3 scallions, sliced
  • 1 bunch fresh cilantro, chopped
  • Red chili flakes for garnish (optional)

Method

    1. Cook noodles according to package instructions. Reserve ½ cup pasta water before draining.
    2. While noodles cook, add peanut butter to a large bowl. Add liquid ingredients one at a time - Yondu, Yondu Spicy, rice vinegar, water, and sesame oil - whisking after each addition until smooth.
    3. Toss hot drained noodles with peanut sauce. Add reserved pasta water a little at a time to reach desired creaminess.
    4. Serve immediately topped with scallions, cilantro, and chili flakes.
  • Tip
  • Build the sauce gradually for silky smoothness - add liquids one at a time to prevent lumps. Swap noodles for rice or zucchini noodles. Control spice level perfectly by adjusting Yondu Spicy to taste.
