Romesco Sauce

Serve it as a sauce for grilled vegetables or as a dip with potato chips, crudités or crackers. You can also use it as a spread for your veggie sandwiches!

  • 4 tomatoes
  • 1 red bell pepper
  • 1 head garlic
  • 3 Tbsp. olive oil
  • 1 Tbsp. sherry vinegar (or apple cider vinegar)
  • ½ cup toasted almonds
  • 1 slice bread
  • 2 Tbsp. Yondu

Method

    1. Preheat oven to 400º F. Add whole tomatoes, pepper, garlic on a sheet tray and cook for 30 minutes. Once cooked, cover sheet tray with a clean kitchen cloth and let rest for 10 minutes.
    2. Peel roasted tomatoes, pepper and garlic and the rest of the ingredients in a food processor and blend until mostly smooth with some texture.
