Quinoa PilafYondu pilaf that’s as flavorful as recipes made with chicken broth!
- 1 Cup Quinoa, rinsed
- ½ cup Pea, frozen
- ½ cup Corn, frozen
- 1 Sprig Scallion, sliced thinly
- 2 Tbsp Yondu
- 1 tsp Paprika
- 2 Tbsp EVOO
- 2 cup Water
1. In a medium skillet over medium high heat, add oil, quinoa, and paprika, lightly toast for about a minute.
2. Add Yondu and water, bring up to a boil, then cover the top and simmer for 15 minutes or until soft.
3. Add frozen peas and corn, stir, cover the top and cook they’re warm and tender, about a minute.
4. Garnish with scallions.
Substitute with any leftover veggies in your fridge.
For different flavor profile, replace with other herbs or spices.
