Quinoa PilafDitch chicken broth for Yondu in this simple pilaf!
- 2 tablespoons olive oil
- 1 cup quinoa, rinsed
- 1 teaspoon paprika
- 2 tablespoons Yondu
- ½ cup frozen peas
- ½ cup frozen corn
1. Heat oil in a medium skillet over medium-high heat. Add quinoa and paprika; cook and stir until toasted, about 2 minutes.
2. Add Yondu and 2 cups water; bring up to a boil; cover and simmer for 15 minutes.
3. Stir in peas and corn; cover to thaw, about 1 minute.
Garnish with sliced scallions
Substitute with any leftover veggies in your fridge.
For different flavor profile, replace with other herbs or spices.
