Parsley & Pepita PestoYondu's umami is a great substitute for a sprinkling of cheese and enhances (instead of masking) the taste of parsley and pepitas!
- 1 cup parsley leaves
- ¼ cup raw pepitas
- ¼ cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Yondu
1. In a food processor, combine all the ingredients and blend until smooth.
Use directly as a flavorful dip or sandwich spread.
For pasta: add a few scoops of pesto to cooked pasta, and adjust with reserved pasta water.
