Minimalist & Light Mushroom Soup

Ingredients

  • 1 cup onion chopped (1 small onion)
  • 3 cups Bella Mushroom chopped (8 oz)
  • 2 Tbsp Olive oil
  • 2 Tbsp Yondu
  • ¼ cup breadcrumbs
  • ½ tsp black pepper

Method

    1. In a pot combine olive oil, onion, and mushrooms over high heat. Cook for 5 mins.
    2. Add Yondu and stir. Add breadcrumbs and 2 cups of water. Bring to a boil; then simmer for 5 mins.
    3. Add black pepper and blend using an immersion blender until smooth and creamy. Serve topped with nuts or croutons.
