Minimalist & Light Cauliflower Soup

  • 1 potato, peeled, washed and diced (8 - 9 oz.)
  • ½ cauliflower, cut into florets
  • 3 cups of water
  • 1 Tbsp. olive oil
  • 4 tsp. Yondu
  • A pinch of black pepper and nutmeg

Method

    1. In a pot over high heat, combine potato, cauliflower, and water and boil for 10 minutes.
    2. Add olive oil, Yondu, pepper, nutmeg, and blend with an immersion blender or food processor until smooth.
    Serve topped with croutons, if desired!
