Creamy Mashed Potatoes

Ingredients

  • 5 Yukon Gold potatoes, peeled and thinly sliced
  • 3 cups water
  • 2 tablespoons Yondu
  • 4 tablespoons light coconut milk

Method

    1. In a medium pot, combine potatoes, water and Yondu. Bring up to a boil; simmer until potatoes are fork tender.
    2. Reserving 1/4 cup cooking liquid, drain the potatoes.
    3. Mash potatoes, adding coconut milk and reserved cooking liquid as needed, until you've reached desired consistency.
