Green MinestroneRescue Forgotten Veggies from your fridge!
- 1 cup Mixed veggies, thinly sliced (mushroom, cabbage, beans, carrots)
- 3 cups Water
- 2 Tbsp Yondu
- To taste Black pepper (optional)
1.Add bean and vegetables in the bottom of a mug, slash ¼ cup of water, Yondu and microwave for 3 mins.
2. Top it off with cold water about ¾ of water.
3. Enjoy with side of toast.
Feel free to use any vegetables you have in your fridge.
Adding legumes or pasta will make this soup a bit more filling.
