Crispy Zucchini Fritters

Golden, crispy fritters let Yondu's umami richness enhance the zucchini's natural flavor while replacing traditional cheese for a lighter, more flavorful bite.
  • 3 medium zucchini 
  • 1 teaspoon salt 
  • 2 green onions, sliced (optional) 
  • 2 large eggs 
  • ½ cup all-purpose flour 
  • 2 tablespoons Yondu 
  • 1 tablespoon cornstarch 
  • ¼ teaspoon baking powder 
  • ½ teaspoon garlic powder 
  • ½ teaspoon black pepper 
  • ½ teaspoon Italian seasoning 
  • Oil for frying 
  • For serving (optional):

  • Sour cream 
  • Green onions, chopped 
  • Lemon wedges 

Method

    1. Drain zucchini: Grate zucchini, toss with salt, let sit 10-15 minutes. Wrap in towel and squeeze out excess liquid. 
    2. Make batter: Mix drained zucchini with remaining ingredients except oil until combined. 
    3. Fry: Heat oil in skillet over medium-high heat. Scoop ¼-cup portions into pan, flatten slightly. Cook 2-3 minutes per side until golden. Drain on paper towels. 
    4. Serve: Top with sour cream, green onions, and lemon wedges (all optional).
